The grand and palatial Spanish styling of this iconic property – originally opened and operated by the incomparable Len Evans – is reminiscent of the architecture found in the hills outside Pamplona. The art deco stonework, shuttered mullion windows, trickling water feature, earthy brick patterns and ornate pillars all combine to suggest the guest has been transported to another world.
Quintessential Basque pintxo finger food meets a modern, avant-garde thematic in the Spanish and French influenced restaurant Sebastian, and its seasonally based menu is inspired daily by what is fresh and available locally. Whether that’s a winter game and forest exploration of Cod Kokotxa, pil-pil sauce and Berkshire pork, or a summer seafood delight of grilled tear drop peas with razor clams and salsa verde, every dish honours the very best of Hunter Valley produce.

Head chef Gianni Moretto has spent years working in traditional Basque establishments as well as acclaimed Michelin starred restaurants, and his vision is to create an experience that reflects the enormous significance and importance of food in Basque culture. Every evening, our team will transport you around the world for a culinary experience shared amongst like-minded travelers.
Frisbee Golf and Lawn Games
Partake in lawn activities on the grounds that surround Tower Lodge. We offer a large range of activities including frisbee golf, croquet, kite flying, bocce and quoits. This is the perfect way to enjoy the sunshine and some friendly competition.
Short Walks and Bike Rides
For those who want to get out and stretch their legs and explore, Tower Lodge has a short walk which starts and finishes here at the property. Or, if you prefer to explore on wheels, grab a mountain bike and take a tour of the sights beautiful Pokolbin and the Hunter Valley have to offer.
Daily Masterclass
Each day between 3:30-4:15 pm our team will host a masterclass, highlighting the very best of local produce and beverages that the Hunter Valley has to offer. Each daily masterclass will be unique and tailored to the season. Our Team will create a casual, informative and authentic experience for all to enjoy.
